Ingredients
For the Chicken
- 600g chicken breast, cut into bite-sized cubes
- 1 tbsp sesame oil or olive oil
- 3 tbsp soy sauce
- 2 tbsp honey
- 3 garlic cloves, minced
- 1 tsp grated ginger
- 1 tsp cornflour mixed with 2 tbsp water
For the Rice & Veggies
- 200g jasmine or basmati rice
- 1 broccoli head, chopped into florets
- 1 red bell pepper, sliced
- 1 cup sweetcorn
Garnish
- Sesame seeds
- Fresh parsley or green onions
Instructions
1. Cook the Rice
Cook the rice according to package instructions and set aside.
2. Prepare the Vegetables
Steam or boil the broccoli for 3–4 minutes until slightly tender.
Lightly cook the bell peppers for 1–2 minutes to keep them colorful and fresh.
Warm the sweetcorn.
3. Make the Honey Garlic Chicken
Heat oil in a large pan over medium-high heat.
Add the chicken cubes and cook for 6–8 minutes until golden and fully cooked.
In a small bowl, mix soy sauce, honey, garlic, and ginger.
Pour the sauce over the chicken and stir well.
Add the cornflour mixture and cook for another 1–2 minutes until the sauce turns glossy and coats the chicken beautifully.
4. Assemble the Bowls
Add rice to each bowl or container.
Arrange the vegetables on the side and top with the honey garlic chicken.
Finish with sesame seeds and fresh parsley.
