Fried Cabbage with Bacon 🧄🥬

Ingredients:

  • 4 slices center-cut bacon (leaner, fewer points than regular bacon)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 1 tsp olive oil (optional – you may rely just on bacon drippings)
  • Salt & black pepper to taste
  • Optional: a pinch of smoked paprika or red pepper flakes for extra flavor

Instructions:

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and place on a paper towel–lined plate. Leave about 1 tsp of bacon drippings in the pan (drain the rest).
  2. Add the onion to the skillet and sauté until softened (about 3–4 minutes).
  3. Add the garlic and cook for 30 seconds until fragrant.
  4. Stir in the chopped cabbage and season with salt, pepper, and optional paprika. Cook, stirring occasionally, until the cabbage is tender but still slightly crisp (about 8–10 minutes).
  5. Crumble the bacon back into the pan, mix well, and serve hot.

  • Center-cut bacon (4 slices) → 6 points total
  • Olive oil (if used, 1 tsp) → 1 point
