Ingredients:
- 4 slices center-cut bacon (leaner, fewer points than regular bacon)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium head of cabbage, chopped
- 1 tsp olive oil (optional – you may rely just on bacon drippings)
- Salt & black pepper to taste
- Optional: a pinch of smoked paprika or red pepper flakes for extra flavor
Instructions:
- In a large skillet, cook the bacon over medium heat until crispy. Remove and place on a paper towel–lined plate. Leave about 1 tsp of bacon drippings in the pan (drain the rest).
- Add the onion to the skillet and sauté until softened (about 3–4 minutes).
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the chopped cabbage and season with salt, pepper, and optional paprika. Cook, stirring occasionally, until the cabbage is tender but still slightly crisp (about 8–10 minutes).
- Crumble the bacon back into the pan, mix well, and serve hot.
