🛒 Ingredients

  • Spaghetti (8 oz)
  • Olive oil
  • Garlic, minced
  • Cherry tomatoes, halved
  • Red onion, thinly sliced
  • Zucchini, diced
  • Kalamata olives, pitted & halved
  • Fresh spinach or arugula
  • Crumbled feta cheese (optional, for topping)
  • Fresh lemon juice
  • Fresh herbs: parsley, oregano, or basil
  • Salt & black pepper

👩‍🍳 Instructions

  1. Cook Pasta – Boil spaghetti in salted water until al dente. Drain, reserving ½ cup of pasta water.
  2. Sauté Veggies – In a large skillet, heat olive oil. Add garlic and onion, cooking until softened and fragrant.
  3. Add Flavor – Toss in zucchini and cherry tomatoes. Cook until tender but still vibrant.
  4. Combine – Stir in olives and spinach, letting the greens wilt slightly. Add the cooked spaghetti and a splash of pasta water to bring everything together.
