Ingredients
- 2 chicken breasts
- 4 pineapple rings
- 1 ripe avocado, sliced
- 1½ cups cherry tomatoes, halved
- 4 cups arugula
- ½ cup fresh mozzarella
- 2 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 garlic clove, minced
- ½ tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
1. Season the Chicken
Rub the chicken breasts with garlic, paprika, salt, black pepper, and a drizzle of olive oil until evenly coated.
2. Grill the Chicken
Heat a grill pan or outdoor grill over medium-high heat. Cook the chicken for 5–7 minutes per side, or until fully cooked and nicely charred. Transfer to a plate, allow to rest for a few minutes, then slice.
3. Grill the Pineapple
Place the pineapple rings on the grill and cook for 2–3 minutes per side until lightly caramelized and grill marks appear.
4. Assemble the Salad
Arrange the arugula on a large serving platter or divide among serving bowls. Add the cherry tomatoes, fresh mozzarella, avocado slices, grilled chicken, and grilled pineapple.
5. Finish and Serve
Drizzle the salad with olive oil and fresh lime juice. Garnish with chopped parsley and serve immediately.
