🥣 Ingredients:

  • 1 lb (450g) extra-lean ground turkey or lean ground beef (99% fat-free for 0 pts)
  • 1 medium onion, finely chopped
  • 2 large bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 1 can (8 oz) tomato sauce (no sugar added)
  • 4 cups (1 liter) low-sodium beef or chicken broth
  • ½ cup uncooked brown rice (or cauliflower rice for 0 pts)
  • 1 tsp olive oil (optional, for sautéing)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

👩‍🍳 Directions:

  1. Brown the meat:
    In a large pot, heat olive oil (or use cooking spray). Add ground turkey and cook until browned, breaking it up as it cooks.
  2. Add veggies:
    Stir in onion, bell peppers, and garlic. Cook for about 4–5 minutes until softened and fragrant.
  3. Add tomatoes & broth:
    Pour in diced tomatoes, tomato sauce, and broth. Stir well to combine.
  4. Add seasoning & rice:
    Mix in Italian seasoning, smoked paprika, salt, pepper, and brown rice (or cauliflower rice).
  5. Simmer:
    Bring to a boil, then reduce heat. Cover and simmer for about 25–30 minutes, or until rice is tender and the soup thickens.
  6. Serve:
    Taste and adjust seasoning. Ladle into bowls, top with fresh parsley or basil, and enjoy warm!
