🥣 Ingredients:
- 1 lb (450g) extra-lean ground turkey or lean ground beef (99% fat-free for 0 pts)
- 1 medium onion, finely chopped
- 2 large bell peppers (any color), diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (no salt added)
- 1 can (8 oz) tomato sauce (no sugar added)
- 4 cups (1 liter) low-sodium beef or chicken broth
- ½ cup uncooked brown rice (or cauliflower rice for 0 pts)
- 1 tsp olive oil (optional, for sautéing)
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- Salt & pepper, to taste
- Fresh parsley or basil, for garnish (optional)
👩🍳 Directions:

Brown the meat:
In a large pot, heat olive oil (or use cooking spray). Add ground turkey and cook until browned, breaking it up as it cooks. -
Add veggies:
Stir in onion, bell peppers, and garlic. Cook for about 4–5 minutes until softened and fragrant. -
Add tomatoes & broth:
Pour in diced tomatoes, tomato sauce, and broth. Stir well to combine. -
Add seasoning & rice:
Mix in Italian seasoning, smoked paprika, salt, pepper, and brown rice (or cauliflower rice). -
Simmer:
Bring to a boil, then reduce heat. Cover and simmer for about 25–30 minutes, or until rice is tender and the soup thickens. -
Serve:
Taste and adjust seasoning. Ladle into bowls, top with fresh parsley or basil, and enjoy warm!
