⅓ cup coconut flour
1 tbsp baking powder
½ tsp salt
6 large eggs, room temperature
½ cup unsalted butter, melted and slightly cooled
½ cup sour cream or unsweetened Greek yogurt
1 tbsp apple cider vinegar
2 tbsp erythritol or monk fruit sweetener (optional, for a hint of brioche sweetness)
Instructions
Preheat the oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
Combine dry ingredients: almond flour, coconut flour, baking powder, and salt.
Whisk wet ingredients: eggs, melted butter, sour cream (or yogurt), and apple cider vinegar. Add sweetener if using.
Mix: Slowly fold the dry ingredients into the wet until a thick batter forms.
Bake: Pour into the loaf pan and bake for 45–55 minutes, until the top is golden and a toothpick comes out clean.
Cool: Rest in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Keto French Toast (Using Your Brioche Bread)
Ingredients
2 thick slices of keto brioche bread
2 eggs
¼ cup heavy cream or almond milk
½ tsp cinnamon
½ tsp vanilla extract
1 tsp butter for frying
Instructions
Whisk together the eggs, cream, cinnamon, and vanilla in a shallow dish.
Dip each bread slice, letting it soak on both sides.
Melt butter in a skillet over medium heat.
Fry each slice for 2–3 minutes per side until golden brown.
