Hot Honey Beef & Cottage Sweet Potato Boats
Sweet, spicy, and so filling. Beef, cottage cheese, and avocado pack in the protein while sweet potato gives cozy comfort. Sweet potatoes are a nutritious “smart carb,” and cottage cheese adds a big protein boost with very little fat.
You’ll Need (serves 2):
• 2 small sweet potatoes, baked until soft
• 6 oz lean ground beef (about 170 g) · 1/2 tsp salt · 1/2 tsp chili powder or smoked paprika
• 2/3 cup cottage cheese (1/3 cup per potato)
• 1/2 ripe avocado, sliced
• 2–3 tsp hot honey (or honey + chili flakes)
• Black pepper to taste · optional: extra chili flakes
How to Make it:
Bake sweet potatoes at 400°F (200°C) for 40–50 minutes until very tender, or microwave until soft. Brown the beef in a pan with salt and chili powder, breaking it up as it cooks. Split each sweet potato, fluff the inside with a fork, and season with a pinch of salt and pepper. Spoon hot beef into the center, add a big scoop of cottage cheese, and tuck avocado slices along the side. Drizzle hot honey over the top and finish with extra pepper or chili flakes.
Hot Honey Cucumber Crunch Salad (side):
• 1 large cucumber sliced · 1 tbsp rice vinegar or apple cider vinegar · 1–2 tsp hot honey · pinch salt · black pepper · 1 tsp olive oil · 1 tsp sesame seeds. Thinly slice cucumber, toss with salt, vinegar, hot honey, oil, pepper, and sesame seeds. Hot honey cucumber salads are trending everywhere right now and give cool, spicy crunch with hardly any carbs.
Tip:
Use smaller sweet potatoes and really load them with beef and cottage cheese so protein stays high and carbs stay in check. A half cup of cottage cheese can give around 12–14 g of protein, and 4 oz lean ground beef adds about 20–23 g more, so each stuffed potato lands near 30+ g protein.
