Muffins That Taste Like Blueberry Pancakes… But Are 100% Keto? Yes. And They’re Ridiculously Good.
Fluffy. Moist. Bursting with berries. Packed with protein. Zero sugar crash.
This isn’t “keto muffin that kinda works.” This is blueberry pancake in muffin form — soft as cloud bread, subtly sweet, studded with juicy blueberries, and fueled by high-protein milk + sugar-free pudding mix (yes, really). Tastes like dessert. Fuels your morning. Perfect for meal prep, grab-and-go breakfasts, or when you need something sweet without wrecking your goals.
And yes — they freeze beautifully. Your mornings just got upgraded.
What You’ll Need:
1 box sugar-free vanilla pudding mix (Jell-O brand shown — it works!)
1 cup Fairlife Core Power or similar high-protein milk (50% less sugar, 26g protein per bottle — game changer)
½ cup almond flour
¼ cup coconut flour
2 large eggs
⅓ cup melted butter or coconut oil
1 tsp baking powder
½ tsp salt
1 cup fresh or frozen blueberries (don’t thaw if frozen — we’ll tell you why)
Optional: 1 tsp vanilla extract
Optional: pinch of cinnamon or lemon zest (for brightness)
(Note: Image shows pudding box + protein milk + blueberries → mixed in bowl → portioned into mini muffin tin → baked to perfection. We’re keeping it simple, real, and totally doable.)
How to Make It (No Fancy Skills Required):
Step 1: Prep your pan.
Line a standard 12-cup muffin tin with paper liners — or grease well if you’re feeling risky. Preheat oven to 350°F (175°C). Don’t skip preheating — fluffy tops depend on it.
Step 2: Mix dry ingredients.
In a medium bowl, whisk together pudding mix, almond flour, coconut flour, baking powder, and salt until evenly combined. No clumps. No rushing.
Step 3: Add wet ingredients.
Make a well in the center. Add eggs, melted butter, protein milk, and optional vanilla/cinnamon. Mix gently with spatula — just until combined. Overmixing = dense muffins. Don’t do it.
Step 4: Fold in blueberries.
Gently stir in blueberries until distributed throughout batter. Some will sink — that’s okay! In fact, it’s kind of charming.
Step 5: Portion & bake.
Divide batter evenly among muffin cups (~¾ full). Bake 18–22 minutes. Tops should be golden. Toothpick should come out clean. Trust the toothpick, not the clock.
Step 6: Cool & enjoy.
Let cool in pan 5 mins, then transfer to wire rack. Serve warm. Or at room temp. Or cold from the fridge. All good. Store leftovers in fridge up to 3 days — or freeze up to 1 month. (Spoiler: They won’t last that long.)
Pro Tips (Because We’ve Been There):
Protein boost: Use Fairlife Core Power Chocolate Milk for chocolate-blueberry version. Insane flavor combo. Try it. Thank us later.
Berry swap: Raspberries, blackberries, diced strawberries (in moderation) — mix it up. Keep it exciting.
Mini muffin hack: Use mini muffin tin for bite-sized snacks. Bake 12–15 mins instead. Perfect for lunchboxes, road trips, or sneaky desk snacks.
Butter upgrade: Brush tops with melted butter right after baking. Extra richness. Extra joy. Totally worth it.
