Ingredients
- 8 eggs
- 8 oz cream cheese (softened)
- ½ stick butter (4 tbsp), melted
- Ground cinnamon (for topping)
- Sugar-free syrup, fresh berries & whipped cream (for serving)
Instructions
- Preheat oven to 350°F (175°C). Grease or spray an 8×8-inch baking dish.
- In a blender, combine eggs, cream cheese, and melted butter until smooth.
- Pour mixture into prepared dish.
- Bake for 30–40 minutes, until set and lightly golden. (It will puff up while baking.)
- Remove from oven and let cool slightly. The bake will deflate as it sets — this is normal.
- Sprinkle with cinnamon and serve warm, topped with sugar-free syrup, berries, and whipped cream.
Notes
- Texture: Think flan + cheesecake + french toast all in one.
- For extra sweetness, you can add 1–2 tbsp of your preferred low-carb sweetener into the blender mix.
