Keto Cheesy Stuffed Portobello Mushrooms

🧾 Ingredients (Serves 4)

4 large portobello mushrooms (stems removed)

1 lb ground beef (or ground turkey)

2 cloves garlic (minced)

½ small onion (finely diced, optional)

4 oz cream cheese (softened)

½ cup shredded mozzarella

½ cup shredded cheddar or provolone

½ tsp Italian seasoning

Salt & pepper to taste

1 tbsp olive oil

👩‍🍳 Instructions

1️⃣ Prep the Mushrooms

Preheat oven to 375°F (190°C).

Brush mushrooms lightly with olive oil.

Place gill-side up on baking sheet.

Pre-bake for 10 minutes to release moisture.

Drain any liquid.

2️⃣ Cook the Filling

Brown ground beef in a skillet.

Add garlic and onion (if using).

Season with salt, pepper, and Italian seasoning.

Drain excess grease.

Stir in cream cheese until melted and creamy.

3️⃣ Stuff & Top

Spoon beef mixture into each mushroom cap.

Sprinkle mozzarella + cheddar generously on top (like in the image).

4️⃣ Bake

Bake 15–20 minutes until cheese is melted and golden.

Broil 1–2 minutes for that browned top.
