Ingredients Makes 15 clusters, ∼1.5g net carbs each

1 ½ cups unsweetened shredded coconut

1 cup sugar-free chocolate chips, like Lily’s or ChocZero

½ cup almond flour

⅓ cup butter, melted

⅓ cup powdered allulose or monk fruit sweetener

2 tbsp MCT powder or collagen powder, optional

2 tbsp heavy cream

1 tsp vanilla extract

¼ tsp salt

Optional: ¼ cup chopped pecans or sliced almonds

Instructions

Toast the coconut: In a dry skillet over medium heat, toast shredded coconut 3–4 min until golden and fragrant. Stir constantly. Let cool. This step = flavor.

Mix the base: In a large bowl, whisk melted butter + sweetener + heavy cream + vanilla + salt until smooth.

Add the dry stuff: Stir in almond flour + MCT powder if using. Mix until it forms a thick “dough.”

Fold in the good stuff: Add toasted coconut, chocolate chips, and nuts if using. Stir until everything is coated. It’ll look messy — that’s perfect.

Scoop: Drop heaping tablespoon-sized mounds onto parchment paper. Gently press together. They won’t spread.

Set: Fridge for 30 min or freezer for 10 min until firm. Then try not to eat the whole tray.
