Let’s be honest, a good PB&J is hard to beat. But eating it out of a low-carb tortilla that’s been air-fried until it’s golden and crispy? That’s a whole new level.
The outside gets shatteringly crisp while the inside stays soft, with warm, melty swirls of peanut butter and strawberry jam. It’s nostalgic, it’s sweet, and it takes about five minutes to throw together. Perfect for a quick breakfast or a snack that actually feels like a treat.
What You’ll Need:
2 Low-Carb Tortillas (almond or coconut flour work best here)
¼ cup Creamy Peanut Butter (unsweetened, no added sugar)
2 tbsp Sugar-Free Strawberry Jam (or raspberry preserves)
1 tbsp Melted Butter (for brushing)
½ tsp Ground Cinnamon
Optional: A pinch of powdered sugar-free sweetener for dusting
How to Make Them:
Spread the base: Lay your tortillas flat. Spread an even layer of peanut butter over each one, leaving just a tiny border around the edges so it doesn’t squish out when you roll.
Add the jam: Dollop small spoonfuls of the sugar-free jam over the peanut butter. Use a knife to gently swirl them together—you want a marbled look, not a messy mix.
Roll it tight: Starting from one edge, roll the tortilla up into a log. Keep it as tight as you can so the layers don’t unravel later.
Slice: Use a sharp knife to cut the log into 6-8 pinwheels. (Wipe the blade between cuts so the sticky jam doesn’t drag and ruin the shape).
Air fry: Preheat your air fryer to 375°F (190°C) and line the basket with parchment paper. Place the pinwheels cut-side up, leaving a little space between them. Brush the tops lightly with melted butter and hit them with a sprinkle of cinnamon.
Cook: Air fry for 8-10 minutes, flipping halfway through, until they’re golden brown and crispy.
Cool: Let them sit for 2-3 minutes before eating. The filling will be molten hot right out of the basket! Dust with powdered sweetener if you want to get fancy.
** Tips for Success:**
Warm the tortillas: If your low-carb tortillas feel stiff or crack when you roll them, microwave them for 10-15 seconds first. It makes them pliable and way easier to work with.
Less is more with the jam: Don’t overdo it. Too much jam makes the pinwheels soggy and causes them to unroll in the air fryer. A thin layer is all you need.
Use parchment paper: Seriously, don’t skip this. The melted jam and butter will stick to the air fryer basket, and you’ll regret it during cleanup.
Mix it up: Not feeling PB&J today? Try chocolate hazelnut spread with a few sliced bananas, or go savory with cream cheese and everything bagel seasoning.
