Ingredients

1 ½ tbsp monk fruit sweetener (powdered, or Ortho)

¼ tsp baking powder

¼ tsp ground cinnamon

Pinch of salt

1 tbsp melted butter

1 tbsp unsweetened almond milk

½ tsp vanilla extract

Cinnamon Swirl (Sugar-Free)

1 tbsp melted butter

1 tbsp monk fruit sweetener (powdered)

½ tsp ground cinnamon

Cream Cheese Frosting (Sugar-Free)

1 tbsp cream cheese, softened

1 tbsp monk fruit sweetener (powdered)

½ tsp heavy cream (or unsweetened almond milk)

Steps to Create

Mix dry ingredients

In a microwave-safe mug (12 oz capacity), combine almond flour, coconut flour, monk fruit sweetener, baking powder, ground cinnamon, and salt. Mix well.

Add wet ingredients

Add melted butter, unsweetened almond milk, and vanilla extract to the mug. Stir until all ingredients are well combined and smooth.

Make the cinnamon swirl

In a small bowl, mix melted butter, powdered monk fruit sweetener, and ground cinnamon for the cinnamon swirl.

Layer and swirl

Pour half of the cake batter into the mug.

Spoon half of the cinnamon swirl mixture on top.

Swirl it into the batter using a toothpick or small spoon.

Add the remaining cake batter to the mug.

Add the remaining cinnamon swirl mixture. Swirl again to create a marbled effect.

Microwave

Microwave the mug cake on high for 1 minute 30 seconds to 2 minutes, or until the cake is set and cooked through.
