For the Cake
- 2 apples (1 cut into small cubes, 1 into thin slices)
- 2 large eggs
- ½ cup sugar (or low-calorie sweetener for lighter version)
- ½ cup milk
- ⅓ cup oil or melted butter
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp cinnamon
- Pinch of salt

Preheat oven to 180°C (350°F).
Grease an 8-inch pan and line with parchment paper.

Whisk eggs + sugar until light and slightly fluffy.
- Add milk, oil, and vanilla. Mix well.
- In another bowl, combine flour, baking powder, cinnamon, and salt.

Fold dry ingredients into wet mixture gently.
- Stir in the apple cubes.
- Pour batter into pan and arrange thin apple slices on top.
- Bake 35–40 minutes until golden and a toothpick comes out clean.
- Let cool slightly before slicing.

- Dust with powdered sugar
- Brush top with warm apricot jam for shine
- Sprinkle chopped nuts before baking

- Replace sugar with erythritol or stevia
- Use whole wheat flour
