- 2 ripe avocados, diced
- 4 hard-boiled eggs, chopped
- 4 cups fresh spinach, chopped

- 3 tbsp Greek yogurt or mayonnaise
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 small garlic clove, minced (optional)
- ยฝ tsp salt
- ยผ tsp black pepper
Optional Add-Ins
- 2 tbsp chopped onions or green onions
- 2 tbsp toasted sunflower seeds or walnuts
- ยผ cup cherry tomatoes
- Pinch chili flakes for heat

Prepare ingredients
Wash and chop spinach. Dice avocados. Chop boiled eggs.

Make dressing
In a small bowl, mix yogurt/mayo, lemon juice, olive oil, garlic, salt, and pepper until smooth.

Assemble salad
In a large bowl, combine spinach, avocado, and eggs.

Add dressing
Pour dressing over salad and gently toss to coat without mashing avocado.

Taste & adjust
Add more salt, pepper, or lemon juice if needed.

Serve
Eat immediately or chill 10โ15 minutes.

- For extra protein, add grilled chicken or tuna.
- For a Pakistani touch, sprinkle chaat masala and roasted cumin powder.
- To keep avocado fresh, add extra lemon juice before storing.
