  • 2 cups cooked rice (basmati or jasmine)
  • 2 chicken breasts, cubed
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp olive oil
  • ยฝ tsp black pepper
  • ยฝ tsp paprika
  • Salt to taste
  • Green onions (for garnish)

  1. Heat oil in a large pan over medium heat.
  2. Add chicken, season with salt, pepper, and paprika. Cook until golden and fully done. Remove and set aside.
  3. In the same pan, sautรฉ onion, garlic, and bell pepper until soft.
  4. Add pineapple chunks and cook 2โ€“3 minutes until slightly caramelized.
  5. Stir in soy sauce and honey.
  6. Add cooked rice and chicken back to the pan. Mix well and cook 3โ€“4 minutes until heated through.
  7. Garnish with green onions and serve warm.
