๐ Ingredients
- 2 cups cooked rice (basmati or jasmine)
- 2 chicken breasts, cubed
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- ยฝ tsp black pepper
- ยฝ tsp paprika
- Salt to taste
- Green onions (for garnish)
๐ฉโ๐ณ Instructions
- Heat oil in a large pan over medium heat.
- Add chicken, season with salt, pepper, and paprika. Cook until golden and fully done. Remove and set aside.
- In the same pan, sautรฉ onion, garlic, and bell pepper until soft.
- Add pineapple chunks and cook 2โ3 minutes until slightly caramelized.
- Stir in soy sauce and honey.
- Add cooked rice and chicken back to the pan. Mix well and cook 3โ4 minutes until heated through.
- Garnish with green onions and serve warm.
๐ฝ Tips
- Add a pinch of red chili flakes for heat.
- For extra flavor, squeeze a little lime juice before serving.
- Want it creamy? Stir in 1โ2 tbsp coconut milk.
