Muffins

  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder

  • ½ cup granulated sugar
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg

Cinnamon Sugar Coating

  • ¼ cup melted butter
  • ½ cup granulated sugar
  • 1½ teaspoons ground cinnamon

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin.
  2. Mix dry ingredients in a bowl: flour, baking powder, baking soda, salt, and nutmeg.
  3. Whisk wet ingredients in another bowl: sugar, oil (or butter), egg, milk, and vanilla.
  4. Combine wet and dry ingredients just until mixed (don’t overmix).
  5. Fill muffin cups about ¾ full.
