Ingredients:
- 10 medium russet potatoes, scrubbed and pricked with a fork
- ½ cup butter, melted
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ¼ cup chopped fresh parsley

Instructions:
- Preheat oven to 400°F (200°C).
- Bake potatoes in a baking dish for 1 hour, or until fork-tender.
- While baking, melt butter in a saucepan over low heat. Stir in sour cream and cheddar until smooth.
- Slice each baked potato lengthwise to create an opening.
- Spoon cheese mixture into each potato and sprinkle with parsley, salt, and pepper.
- Return potatoes to the oven for 5–10 minutes, until the cheese is bubbly.
