Ingredients

  • 1 large sweet potato, washed and scrubbed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1–2 teaspoons honey (for drizzling)
  • 2–3 tablespoons crumbled feta cheese
  • Fresh parsley or chives (optional)
  • A pinch of chili flakes (optional)

Instructions

1. Preheat Oven

Set your oven to 400°F (200°C).


2. Prep the Sweet Potato

You can choose either method:

Option A – Wedges:
Cut the sweet potato into thick wedges.

Option B – Rounds:
Slice into ½-inch rounds.

Option C – Whole (loaded style):
Pierce whole potato with a fork several times.


3. Season

For wedges or rounds:

  • Place sweet potato pieces on a baking sheet.
  • Drizzle with olive oil.
  • Sprinkle salt, pepper, and smoked paprika.
  • Toss well to coat.

For whole potato:

  • Rub the whole potato with olive oil and spices.

4. Roast

  • Wedges or rounds: Roast for 25–30 minutes, flipping halfway, until tender and caramelized.
  • Whole sweet potato: Bake for 45–60 minutes, until soft inside.

5. Finish

Transfer sweet potato to a plate and top with:

  • Crumbled feta
  • A drizzle of honey
  • Fresh herbs or chili flakes, if desired

Serving Ideas

  • As a side with chicken or salmon
  • Add chickpeas for a full vegetarian meal
  • Serve over a bed of arugula with lemon
