Rustic Mediterranean Tripe & White Bean Stew

Ingredients

The Main Ingredients

  • 1 kg honeycomb tripe, cleaned and rinsed
  • 2 tbsp apple cider vinegar
  • 200g smoked sausage or spicy chorizo, sliced
  • 2 cans cannellini beans or great northern beans, drained

Flavor Base

  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 can crushed tomatoes
  • 2 tbsp tomato paste
  • 1 cup white wine or extra beef broth
  • 3 cups beef bone broth

Herbs & Seasoning

  • 2 bay leaves
  • 1 tsp oregano
  • ยฝ tsp smoked paprika
  • Salt & black pepper to taste
  • ยผ cup fresh parsley, chopped

Instructions

Prepare the Tripe

Rinse the tripe thoroughly with cold water and apple cider vinegar.

Place in a large pot, cover with water, and boil for 10 minutes. Drain and rinse again.

Cut into bite-sized strips or squares.


Build the Flavor Base

In a large Dutch oven or heavy pot, cook the sausage until browned and fragrant. Remove and set aside.

In the same pot, sautรฉ onion, carrots, and celery until soft.

Add garlic and tomato paste. Cook for 2 minutes until rich and aromatic.

Pour in the white wine and scrape up all the flavorful bits from the bottom of the pot.


Slow Simmer

Add tripe, crushed tomatoes, beef broth, bay leaves, oregano, and smoked paprika.

Bring to a boil, then reduce heat and simmer covered for 1.5โ€“2 hours until the tripe becomes tender.

Stir in the white beans and cooked sausage.

Simmer uncovered for another 15โ€“20 minutes until slightly thickened.

Season with salt and black pepper.


Serve

Ladle the hot stew into deep bowls and garnish generously with fresh parsley

Serve with fluffy rice or crusty artisan bread for the ultimate comforting meal
