This is the perfect quick, single-serving dessert! It’s naturally sweetened by ripe bananas, has a comforting, cake-like texture, and comes together in just minutes. Enjoy it warm from the microwave for a cozy treat.

Prep Time: 3 minutes | Cook Time: 2-3 minutes | Total Time: 5 minutes | Serves: 1

Ingredients

  • 1 ripe banana, mashed (about ½ cup)
  • 1 large egg
  • 3 tbsp milk (dairy or any plant-based milk like almond or oat)
  • ¼ cup rolled oats (ensure they are gluten-free if necessary)
  • ½ tsp cinnamon (highly recommended for warmth and flavor)
  • ¼ tsp vanilla extract (optional but delicious)
  • Pinch of salt (to enhance the sweetness)
  • Optional add-ins: A few dark chocolate chips (sugar-free), chopped nuts, or a tablespoon of unsweetened shredded coconut.

Instructions

  1. Mash Banana: In a microwave-safe mug (a slightly larger one is best), mash the banana very well with a fork until it’s mostly smooth.
  2. Add Wet Ingredients: Crack the egg into the mug and add the milk and vanilla extract (if using). Whisk everything together with the fork until it’s well combined.
  3. Add Dry Ingredients: Add the rolled oats, cinnamon, and a tiny pinch of salt. Stir until everything is evenly mixed. If you’re using any add-ins like nuts or chocolate chips, fold them in now.
  4. Cook: Place the mug in the microwave. Cook on high for 2 to 3 minutes. Start checking at 2 minutes. The cake is done when the top looks set and is dry to the touch. It will be soft but should not be wet or jiggly.
  5. Cool and Serve: Carefully remove the mug from the microwave (it will be hot!). Let it cool for a minute or two before eating. You can enjoy it right out of the mug or turn it out onto a plate.

Recipe Notes & Tips

  • Mug Size: Use a 12-ounce or larger mug to prevent the batter from overflowing as it cooks.
  • Texture: This mug cake will have a soft, moist, and slightly dense texture, similar to baked oatmeal or a tender muffin.
  • Sweetness: The riper your banana, the sweeter and more flavorful your mug cake will be.
  • Blended Option: For a smoother, more uniform texture, you can blend the oats into a fine oat flour first. Simply pulse the ¼ cup of oats in a blender or spice grinder until they become a powder.
  • Double It: This recipe can easily be doubled and cooked in a large microwave-safe bowl for a few minutes longer to serve two.
