Ingredients
- 4 skinless chicken breasts
- 4 slices lean back bacon (fat removed, Syn-free)
- 120g reduced-fat cheddar or mozzarella (3 × Healthy Extra A, or 12 Syns)
- 200g mushrooms, sliced
- 2 cloves garlic, minced
- 1 small onion, sliced
- Low-calorie cooking spray
- Salt & black pepper
For honey-mustard sauce:
- 3 tbsp fat-free Greek yogurt
- 1 tbsp light mayonnaise (2 Syns)
- 1 tsp Dijon mustard (½ Syn)
- 1 tsp honey (1 Syn)
- Pinch of smoked paprika
Method
- Preheat oven to 190°C (fan 170°C). Spray a baking dish with low-calorie spray.
- Cook chicken: Season chicken breasts with salt & pepper, sear in a hot pan until golden on both sides (doesn’t need to be fully cooked). Place into baking dish.
- Cook veg & bacon: In the same pan, fry onion, garlic, and mushrooms until softened. Set aside. Grill bacon until crisp, then slice into pieces.
- Make sauce: Mix yogurt, mayo, mustard, honey, and paprika until smooth.
- Assemble: Spread sauce over chicken, top with mushrooms, onions, bacon, and finally cheese.
- Bake for 15–20 minutes until chicken is cooked through and cheese is bubbling.
