Ingredients

- 4 slices center-cut bacon, cooked and crumbled (4 Points)
- 1 cup mushrooms, sliced (0 Points)
- 1 cup reduced-fat shredded cheddar cheese (8 Points)

- Salt, pepper, garlic powder, paprika (to taste, 0 Points)
Instructions
- Make honey-mustard sauce: Mix mayonnaise (or light sour cream), Dijon mustard, honey, and lemon juice. Set aside.
- Prepare chicken: Season chicken breasts with salt, pepper, garlic powder, and paprika. Spray skillet with cooking spray and sear chicken 3–4 minutes per side until golden brown (doesn’t need to be cooked through).
- Cook mushrooms: In the same pan, sauté mushrooms until tender. Remove and set aside.
- Assemble: Place chicken breasts in a baking dish. Spread about 1 tbsp honey-mustard sauce over each breast. Top with mushrooms, bacon crumbles, and shredded cheese.
- Bake: Bake at 190°C / 375°F for 15–20 minutes until chicken is cooked through and cheese is melted and bubbly.
- Serve: Drizzle a little extra honey-mustard sauce on top before serving (optional).
