Slow Cooker Sausages with Peppers and Onions
Ingredients:
– 4 Italian sausages (mild or spicy, based on preference)
– 2 bell peppers (choose a red and a yellow), sliced
– 1 large onion, sliced
– 3 cloves garlic, minced
– 1 can (14.5 oz) diced tomatoes, including juice
– 1 teaspoon Italian seasoning
– 1/2 teaspoon red pepper flakes (optional)
– Salt and pepper, to taste
– Fresh basil or parsley for garnish (optional)
Instructions:
1. Arrange the Italian sausages at the bottom of the slow cooker.
2. Place the sliced bell peppers and onions over the sausages.
3. In a bowl, combine minced garlic, diced tomatoes with juice, Italian seasoning, optional red pepper flakes, salt, and pepper. Pour this over the sausages and vegetables.
4. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours, until sausages are thoroughly cooked and vegetables are soft.
5. Once done, gently stir to mix the ingredients well. Serve warm, with a garnish of fresh basil or parsley, if you like.
