Ingredients

  • 6 large eggs, separated
  • 1/2 tsp cream of tartar (or a few drops lemon juice)
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella (or cheddar for stronger flavor)
  • 1/4 tsp salt
  • 1–2 tbsp melted butter (optional, for extra softness)

Instructions

1. Preheat oven

Preheat to 350°F (175°C). Line a small loaf pan with parchment paper.


2. Whip egg whites (important step)

In a clean bowl, add egg whites + cream of tartar.
Beat until stiff peaks form (very fluffy and stable). This creates the “bread” structure.


3. Mix yolk base

In another bowl combine:

  • egg yolks
  • cream cheese
  • shredded cheese
  • salt
  • optional melted butter

Mix until smooth and thick.


4. Fold carefully

Gently fold the whipped egg whites into the yolk mixture in batches.
Do NOT overmix — you want to keep the air.


5. Bake

Pour into loaf pan and smooth the top.

Bake for 25–35 minutes, until:

  • set in the center
  • slightly pulling from sides

6. Cool properly

Let cool 15–20 minutes before slicing.
