Spinach and Cheese Pide

Ingredients

For the Dough

  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp instant yeast
  • Pinch of salt
  • 2 tbsp oil
  • Lukewarm water (for kneading)

For the Filling

  • 250 g fresh spinach, finely chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mozzarella or feta cheese
  • Salt & black pepper, to taste

Instructions

Prepare the dough
In a large bowl, mix flour, yeast, sugar, salt, and oil. Gradually add lukewarm water and knead until a soft dough forms. Cover and let it rest in a warm place for about 1 hour until doubled in size.

Make the filling
Heat a little oil in a pan and sauté onions and garlic until soft and fragrant. Add spinach and cook for 2–3 minutes until wilted and moisture evaporates. Remove from heat and mix in cheese, salt, and black pepper.

Shape the pide
Divide the dough into small balls. Roll each into a long oval shape. Add spinach filling in the center. Fold the edges inward to form a boat-like shape and pinch the ends together.

Brush for golden color
Place pides on a greased baking tray and brush the edges with beaten egg or milk.

Bake
Bake in a preheated oven at 200°C for 15–20 minutes until golden brown and bubbly.

Serve
Serve warm—crispy outside, cheesy and flavorful inside 😍

Feta gives a salty, tangy flavor while mozzarella makes it extra stretchy and cheesy.
