Bakery-Style Brioche Berry Tarts

Ingredients

For the Brioche Dough

  • 2½ cups (300g) strong bread flour
  • 1 tbsp instant yeast
  • 3 tbsp granulated sugar
  • ½ tsp fine salt
  • 1 large egg, room temperature
  • ½ cup warm milk
  • 4 tbsp unsalted butter, softened

Cream Cheese Filling (Blueberry Tarts)

  • 100g cream cheese, softened
  • 1½ tbsp powdered sugar
  • ½ tsp vanilla extract

Matcha Filling (Cherry Tarts)

  • 2 tsp matcha powder
  • 1½ tbsp softened butter or heavy cream
  • 1½ tbsp powdered sugar

Mix until smooth and creamy.


Fruit Toppings

  • Fresh blueberries
  • Fresh cherries, halved
  • Fresh raspberries
  • Powdered sugar, for dusting

Streusel Crumble

  • 2 tbsp all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp cold butter

Rub together until crumbly.


Egg Wash

  • 1 egg
  • 1 tbsp milk

Whisk together well.


Instructions

Prepare the Brioche Dough

In a large bowl, combine bread flour, yeast, sugar, and salt.

Add warm milk and egg, mixing until a rough dough forms.

Gradually knead in softened butter, one tablespoon at a time, until the dough becomes smooth and elastic.

Cover and let rise in a warm place for 1–1½ hours until doubled in size.


Shape the Tarts

Punch down the dough and divide into 6–8 equal portions.

Roll into smooth balls and place onto a lined baking tray. Flatten slightly.

Cover loosely and let rest for 20 minutes.


Create the Center Wells

Grease the bottom of a small glass and press firmly into the center of each dough ball to create a deep indentation.


Fill the Tarts

Blueberry Version

Fill the center with sweet cream cheese mixture and press fresh blueberries on top.

Cherry Matcha Version

Spread a little matcha paste into the center and top with cherries and raspberries.


Finish & Bake

Brush the brioche edges generously with egg wash.

Sprinkle streusel crumble over the edges and lightly over the fruit centers.

Bake at 180°C (350°F) for 15–18 minutes until deeply golden and glossy.

Cool completely before dusting lightly with powdered sugar.
