Ingredients

The Cheese Core

  • 400g low-moisture mozzarella cheese block, cut into thick rectangles
  • Optional: Provolone or Monterey Jack cheese

The Crispy Coating

  • ½ cup all-purpose flour
  • 2 large eggs, beaten with 1 tbsp water
  • 1½ cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp fine sea salt

For Frying & Garnish

  • Vegetable or canola oil, for frying
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp red chili flakes
  • Flaky sea salt, for finishing

Instructions

Prepare the Cheese

Cut the mozzarella into thick rectangular sticks.

Set up three bowls:

  • Bowl 1: Flour + sea salt
  • Bowl 2: Beaten eggs
  • Bowl 3: Panko breadcrumbs + garlic powder + onion powder

Double-Coat the Croquettes

Roll each cheese stick in flour first, then dip into the egg wash.

Coat thoroughly in panko breadcrumbs and press gently so the crumbs stick well.

Repeat the process one more time: dip back into egg and coat again in panko breadcrumbs. Make sure the ends are fully sealed.


Freeze Before Frying

Place the coated croquettes on a lined tray and freeze for at least 30–45 minutes.

This step keeps the cheese perfectly melted inside while the outside becomes extra crispy.


Fry Until Golden

Heat oil to 180°C (350°F).

Fry the croquettes in small batches for 2–3 minutes until deeply golden and crunchy.

Remove and drain on paper towels or a wire rack.


Garnish & Serve

Stack on a serving plate and sprinkle with fresh parsley, chili flakes, and flaky sea salt.
