Ingredients
For the Benedictine Spread:
- 225g cream cheese, softened
- ½ cup grated cucumber (water squeezed out)
- 2 tbsp fresh dill, finely chopped
- 2 tbsp chives or green onion, finely chopped
- 1 tbsp mayonnaise or Greek yogurt
- 1 garlic clove, minced (optional)
- Squeeze of lemon juice
- Salt & black pepper to taste
For Assembly:
- 6 slices soft sandwich bread
- 1 English cucumber, thinly sliced
- Extra dill or microgreens for garnish
Instructions
1️⃣ Prepare the Cucumber
Grate the cucumber and squeeze out all excess water using a clean kitchen towel.
This keeps the spread thick and creamy instead of watery.
2️⃣ Make the Herb Spread
In a bowl, mix together:
- Cream cheese
- Grated cucumber
- Dill
- Chives
- Mayo or yogurt
- Lemon juice
- Garlic (optional)
Season with salt and pepper.
Whip until smooth, fluffy, and creamy.
3️⃣ Assemble the Sandwich
Spread a thick layer of the cucumber cream cheese mixture onto one bread slice.
Add thin cucumber slices on top.
Repeat the layers for a beautiful double-decker sandwich, then finish with the final bread slice.
