Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh chives, chopped
Optional:
- 1 tablespoon chopped fresh parsley
- ½ teaspoon Italian seasoning
- Pinch of red pepper flakes
- Lemon wedges, for serving
Instructions
- Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
- Wash and thoroughly dry the cauliflower florets to help them roast until crispy.
- In a large bowl, combine the olive oil, minced garlic, garlic powder, paprika, salt, and black pepper.
- Add the cauliflower and toss until evenly coated.
- Sprinkle in the grated Parmesan and toss again so the florets are well coated.
- Arrange the cauliflower in a single layer on the prepared baking sheet, leaving a little space between the pieces.
- Roast for 25–30 minutes, turning halfway through, until the edges are golden brown and crispy.
- For extra browning, broil for 1–2 minutes at the end, watching carefully to prevent burning.
- Remove from the oven and sprinkle with the fresh chives (and parsley, if using).
