Soft, cheesy, swirled with ham, and brushed with garlicky butter. These pinwheels are the kind of thing that makes waking up early almost worth it.
The dough is pillowy with slightly crisp edges, and inside you get these gorgeous spirals of salty ham and melted cheddar. Then everything gets brushed with herb butter that makes them basically irresistible. They’re perfect for breakfast, lunch, or that mid-afternoon snack when you need something savory and satisfying.
Best part? One bowl, no fancy equipment, and they’re done in under 20 minutes.
What You’ll Need:
For the Dough:
2 cups Shredded Mozzarella Cheese (low-moisture)
2 oz Cream Cheese
1 ½ cups Super Fine Almond Flour
1 Large Egg
½ tsp Baking Powder
Pinch of Salt
For the Filling:
8-10 Slices Deli Ham
1 cup Shredded Cheddar Cheese
For the Garlic Butter:
2 tbsp Melted Butter
½ tsp Garlic Powder (or 1 clove minced)
1 tsp Dried Parsley or Italian Seasoning
How to Make Them:
Make the dough: Melt the mozzarella and cream cheese together in the microwave (about 1 minute). Stir until smooth, then mix in the almond flour, egg, baking powder, and salt until you’ve got a cohesive dough ball.
Roll it out: Sandwich the dough between two sheets of parchment paper and roll it into a large rectangle, about ¼ inch thick.
Add the filling: Layer the ham slices evenly over the dough, leaving a small border around the edges. Sprinkle the cheddar generously over the ham.
Roll & slice: Starting from the long edge, roll the dough up tight into a log. Use a sharp knife to cut it into 8-10 pinwheels.
Bake: Place them on a baking sheet. Mix the melted butter with garlic powder and herbs, then brush it over the tops. Bake at 400°F (200°C) for 12–15 minutes until golden and bubbly.
Eat: Let them cool for a few minutes, then dig in while they’re still warm and gooey.
Tips I’ve Learned:
Dough too dry? If it feels crumbly or tough to roll, splash in a little cream or broth. It’ll loosen up and become way more pliable.
Can’t get clean cuts? If the log is too soft and squishes when you slice it, pop it in the fridge for 10-15 minutes first. It firms up and gives you those perfect swirls.
Don’t overstuff: Keep the layers even and don’t pile filling right to the edges, or they might unravel while baking.
Dip them: Serve with sugar-free marinara, honey mustard, or ranch. It takes them to the next level.
