Ingredients
For the Salmon:
- 2 salmon fillets
- 2 lemon slices (for topping)

For the Roasted Zucchini:
- 2 zucchinis, sliced into rounds

For the Rice:
- 1 cup wild rice blend (or any rice of your choice)
- 2 cups water or broth
- 1 tablespoon olive oil or butter
- Salt to taste
- Green onions for garnish
Instructions
1. Prepare the Rice:
- Rinse the rice under cold water.
- In a pot, bring 2 cups of water (or broth for added flavor) to a boil. Add the rice, a pinch of salt, and a tablespoon of olive oil or butter.
- Reduce the heat to low, cover, and cook for about 20-25 minutes, or until the rice is tender and the liquid has been absorbed. Fluff with a fork, and garnish with green onions.
2. Prepare the Roasted Zucchini:
- Preheat the oven to 400°F (200°C).
- Slice the zucchini into rounds. Place them on a baking sheet and drizzle with olive oil. Season with salt, pepper, and garlic powder.
- Roast for about 15-20 minutes, flipping halfway through until tender and lightly browned.
- After roasting, top with sour cream or Greek yogurt for added creaminess.
3. Grill the Salmon:
- Preheat your grill or grill pan over medium-high heat.
- Brush the salmon fillets with olive oil and season with salt, pepper, garlic powder, and paprika (if using).
- Place the salmon fillets on the grill and cook for about 4-5 minutes per side, depending on the thickness, until the salmon flakes easily with a fork.
- Add a slice of lemon to the top of each fillet during the last minute of grilling for extra flavor.
4. Assemble the Plate:
- Place a serving of rice on each plate, add the roasted zucchini, and top with the grilled salmon fillets.
- Garnish with freshly chopped green onions and additional lemon wedges if desired.
