Lemon Grilled Salmon with Rice and Roasted Zucchini

Ingredients

For the Salmon:

  • 2 salmon fillets
  • 2 lemon slices (for topping)
  • 1 tablespoon olive oil (for brushing)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)

  • Green onions for garnish

For the Roasted Zucchini:

  • 2 zucchinis, sliced into rounds

  • 1/2 cup sour cream or Greek yogurt (for dipping or topping)

For the Rice:

  • 1 cup wild rice blend (or any rice of your choice)
  • 2 cups water or broth
  • 1 tablespoon olive oil or butter
  • Salt to taste
  • Green onions for garnish

Instructions

1. Prepare the Rice:

  • Rinse the rice under cold water.
  • In a pot, bring 2 cups of water (or broth for added flavor) to a boil. Add the rice, a pinch of salt, and a tablespoon of olive oil or butter.
  • Reduce the heat to low, cover, and cook for about 20-25 minutes, or until the rice is tender and the liquid has been absorbed. Fluff with a fork, and garnish with green onions.

2. Prepare the Roasted Zucchini:

  • Preheat the oven to 400°F (200°C).
  • Slice the zucchini into rounds. Place them on a baking sheet and drizzle with olive oil. Season with salt, pepper, and garlic powder.
  • Roast for about 15-20 minutes, flipping halfway through until tender and lightly browned.
  • After roasting, top with sour cream or Greek yogurt for added creaminess.

3. Grill the Salmon:

  • Preheat your grill or grill pan over medium-high heat.
  • Brush the salmon fillets with olive oil and season with salt, pepper, garlic powder, and paprika (if using).
  • Place the salmon fillets on the grill and cook for about 4-5 minutes per side, depending on the thickness, until the salmon flakes easily with a fork.
  • Add a slice of lemon to the top of each fillet during the last minute of grilling for extra flavor.

4. Assemble the Plate:

  • Place a serving of rice on each plate, add the roasted zucchini, and top with the grilled salmon fillets.
  • Garnish with freshly chopped green onions and additional lemon wedges if desired.
