Ingredients
Cod:
4 cod fillets
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp paprika
Tomato Basil Sauce:
1 tbsp olive oil
3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
½ cup cherry tomatoes, halved
1 tsp dried oregano
½ tsp red pepper flakes (optional)
½ tsp salt
½ tsp black pepper
¼ cup fresh basil, chopped
1 tbsp lemon juice
Instructions
Season cod:
Pat cod fillets dry and season with salt, black pepper, and paprika.
Sear fish:
Heat olive oil in a skillet over medium-high heat. Add cod and cook for 3–4 minutes per side until golden and cooked through. Remove and set aside.
Make sauce:
In the same pan, add olive oil and sauté garlic for 30 seconds.
Add crushed tomatoes, cherry tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer for 8–10 minutes until slightly thickened.
Add basil & lemon:
Stir in fresh basil and lemon juice for brightness.
Combine:
Return cod to the pan and spoon sauce over the fillets. Simmer for 2–3 minutes.
Serve:
Serve hot with extra basil on top.
