Ingredients

Beef & Vegetables

250g beef (ribeye, sirloin, or flank steak), thinly sliced against the grain
2 leeks, cleaned and cut into diagonal pieces
2 garlic cloves, minced
2–3 red chilies, sliced
3 tbsp cooking oil

For Marinating Beef

1 tbsp light soy sauce
1 tsp cooking wine
½ tsp sugar
1 tsp cornstarch
1 tsp oil

For Sauce

1 tbsp light soy sauce
1 tsp oyster sauce
½ tsp sugar
Pinch of salt and black pepper

Instructions

Marinate the Beef
In a bowl, combine sliced beef with soy sauce, cooking wine, sugar, cornstarch, and oil. Mix well and let marinate for 10–15 minutes.

Prepare the Sauce
In a small bowl, mix soy sauce, oyster sauce, sugar, salt, and black pepper. Set aside.

Sear the Beef
Heat 2 tablespoons of oil in a wok or large pan over high heat. Add beef in a single layer and sear quickly for 1–2 minutes until browned. Remove and set aside.

Cook Aromatics
Add remaining oil to the wok. Add garlic and chilies, stir-fry for 30 seconds until fragrant.

Add Leeks
Add leeks and stir-fry for 2–3 minutes until slightly softened but still crisp.

Combine Everything
Return beef to the wok. Pour in the prepared sauce and toss everything together over high heat for 1–2 minutes until well coated and heated through.
