- 2 medium zucchinis, sliced into thin rounds
- 500 g (1 lb) lean ground beef
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 cups shredded mozzarella cheese
- 1 cup tomato sauce or your favorite pasta sauce
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley, for garnish

Instructions
1. Prepare the Zucchini
Slice the zucchini into thin rounds and lightly sprinkle with salt. Let stand for 10 minutes to draw out excess moisture, then pat dry with paper towels.
2. Cook the Beef Filling
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds until fragrant.
Add the ground beef and cook until browned, breaking it into small pieces as it cooks.
Stir in the tomato sauce, Italian seasoning, paprika, salt, and black pepper. Simmer for 5–7 minutes until the sauce is slightly thickened.
3. Assemble the Casserole
Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
Spread half of the beef mixture evenly across the bottom of the dish.
Arrange half of the zucchini slices over the meat, then sprinkle with half of the mozzarella cheese.
Repeat the layers with the remaining beef mixture, zucchini, and mozzarella cheese. If using Parmesan or ricotta, add them between the layers for extra richness.
4. Bake
Bake for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden.
For a beautifully browned top, broil for 2–3 minutes, keeping a close eye on it to prevent burning.
5. Garnish and Serve
Remove the casserole from the oven and let it rest for 5 minutes before serving.
Sprinkle with freshly chopped parsley and serve warm.
