These buttermilk baked potatoes are creamy, fluffy, and unbelievably easy. With just potatoes, buttermilk, and butter, they come out rich inside with crispy golden tops.

Ingredients

  • 4 medium Russet potatoes
  • 1 cup buttermilk
  • 2 tablespoons melted butter
  • Salt and black pepper, optional

Step 1: Prep

Preheat oven to 400°F.

Lightly grease a baking dish.

Wash and dry the potatoes, then pierce each one several times with a fork.

Step 2: First Bake

Place the whole potatoes in the baking dish.

Bake for 35–40 minutes until beginning to soften.

Step 3: Add the Buttermilk

Remove the potatoes from the oven.

Cut a slit across the top of each potato and gently press them open.

Pour the buttermilk over and into the potatoes.

Drizzle melted butter on top.

Step 4: Finish Baking

Return to the oven for 10–15 more minutes.

Bake until the potatoes are completely soft and the tops are golden and bubbling.

Tips

  • Add shredded cheddar or Parmesan before the final bake
  • Sprinkle with chives or green onions before serving
  • Yukon Gold potatoes also work well
  • Serve with roasted chicken, steak, or pork chops
