Cottage Cheese Dill Pickle Ranch Chicken Quesadillas

Ingredients:
• 2 cups shredded chicken
• 1 cup cottage cheese
• 1/4 cup ranch dressing
• 1/4 cup dill pickles, finely chopped
• 1 tbsp pickle juice
• 1 cup mozzarella
• 4 large tortillas
• Salt, pepper
Methods:
Mix cottage cheese, ranch, pickles, pickle juice, salt and pepper.
Stir in shredded chicken.
Spread mixture on tortillas, sprinkle mozzarella, then fold.
Cook in a skillet 2–3 minutes per side until golden.
Slice into wedges.
