Ingredients

For the Marinade

  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • ¼ cup olive oil
  • 1 tablespoon white wine vinegar (or red wine vinegar)
  • Salt & black pepper, to taste

For the Appetizer

  • 8 oz block of cheese, cut into cubes
(Cheddar, Monterey Jack, Colby Jack, Pepper Jack, or mozzarella all work)
  • ½ cup sliced salami
  • ½ cup sliced pickles or cornichons
  • Optional additions:
    • Thinly sliced red onion
    • Fresh herbs (parsley, basil)
    • Cherry peppers
    • Olives

Instructions

  1. Prepare the marinade:
In a small bowl or jar, whisk together Dijon mustard, minced garlic, Italian seasoning, olive oil, vinegar, salt, and pepper until well combined.
  2. Combine the ingredients:
In a medium bowl or shallow dish, add the cubed cheese, salami slices, and pickles.
  3. Pour the marinade:
Drizzle the marinade over the cheese mixture.
Toss gently with a spoon or shake if using a lidded container, making sure everything is evenly coated.
  4. Marinate:
Cover and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor.
Stir once or twice if possible to redistribute the marinade.
  5. Serve:
Transfer to a serving platter or bowl.
Serve with toothpicks, crackers, or crostini.

Tips

  • For stronger flavor, marinate overnight.
  • Use a variety of cheeses for a colorful platter.
  • Add red chili flakes for a spicy twist.
  • This keeps well in the fridge for 3–4 days.
