Ingredients (2–3 servings)

  • 1 cup (225g) cottage cheese
  • 2 large eggs
  • ½ cup Greek yogurt (plain)
  • 1 scoop (25–30g) vanilla whey protein powder
  • ¼ cup rolled oats (optional, for texture)
  • 1–2 tbsp honey or maple syrup (optional)
  • ½ tsp vanilla extract
  • 1 tsp baking powder
  • ½ cup blueberries (fresh or frozen)
  • Pinch of salt

Optional:

  • Cinnamon (¼ tsp)
  • Lemon zest (for freshness)

Instructions

  1. Preheat oven
    • 180°C (350°F)
  2. Blend the base
    • In a blender, mix:
      cottage cheese + eggs + Greek yogurt + protein powder + vanilla
    • Blend until smooth (this removes lumps and makes it “cake-like”).
  3. Add dry ingredients
    • Stir in oats, baking powder, salt, and optional cinnamon.
  4. Add berries
    • Gently fold in blueberries (don’t overmix or they’ll break).
  5. Bake
    • Pour into a greased small baking dish.
    • Bake for 25–35 minutes until set and lightly golden.
  6. Cool & serve
    • Let it cool for 10–15 minutes before slicing (it firms up as it rests).
