Ingredients:

  • 2 cups canned chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, finely chopped

  • 1/4 cup feta cheese, crumbled (optional)

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and fresh parsley.

  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the chickpea mixture and toss until everything is well coated.

  4. Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

  5. Serve the chickpea salad on its own or as a side dish.
