Ingredients:

  • 2 medium carrots, grated (Speed)

Instructions:

  4. Stir wet ingredients into dry until just combined.
  5. Fold in grated carrots.
  6. Pour batter into the prepared tray and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool completely before icing.
  9. For the icing, mix cream cheese, sweetener, and vanilla until smooth.
  10. Spread icing evenly on the cooled cake.
