Ingredients
1 lb lean ground turkey or chicken
1 cup shredded carrots
1 cup bell peppers, thinly sliced
1 cup snow peas, julienned
1 cup mushrooms, sliced
4 green onions, thinly sliced
3 cloves garlic, minced
1 tablespoon ginger, grated
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 teaspoon Sriracha (optional)

Instructions
In a large skillet, cook lean ground turkey or chicken over medium heat until fully browned. Drain any excess fat and set aside.
In the same skillet, add shredded cabbage, shredded carrots, sliced bell peppers, julienned snow peas, sliced mushrooms, green onions, minced garlic, and grated ginger.
Stir the vegetables and aromatics, allowing them to cook for 5-7 minutes or until they begin to soften.
Reintroduce the cooked ground turkey or chicken to the skillet, mixing it thoroughly with the vegetables.
In a small bowl, whisk together low-sodium soy sauce, rice vinegar, sesame oil, and Sriracha if desired. Pour the sauce over the meat and vegetable mixture, ensuring even coating. Season with salt and pepper to taste.
